Recipe: Easy Avocado with Eggs


For today, I’ll be sharing this super easy recipe which features one ingredient that I’m wanting to cook a lot more with- the avocado. Apart from in guacamole or salads, I’ve never really used it in any main dishes, so if you’re reading this and have any suggestions, please do pop a comment below.

In terms of cooking, this will be one of the most simplest things you’ll do, and the great thing is, it tastes delicious too. It’s extremely nutritious and very healthy, also making it the perfect snack for when you’re busy and need something to fill you up!

As you can see below, the recipe is very basic, easy to follow and quick to make.


For this recipe, not many ingredients are needed at all, it’s extremely quick to make and tastes great. I tested this snack on my boyfriend, and he was happy so I hope you equally enjoy it as much as we did!

Easy Avocado with Eggs

  1. 1 avocado
  2. 2 eggs
  3. 1 spring onion
  4. Salt
  5. Pepper
  1. Turn on your oven to approx 180°C (fan oven)
  2. Cut your avocado in half
  3. Remove the large seed
  4. Hollow out a large circle in each half of your avocado enough to crack an egg into it
  5. Crack one egg into each half
  6. Season with spring onion slices, salt and pepper
  7. Bake for approx 15 minutes
  8. Now you can sit back and enjoy!
