Hasn’t Easter this year just completely crept up on us? With it being so early and my birthday being slat bang in the middle, it’s completely thrown me off.
And the fact that we’ve had snow and a hint of spring all in one week, certainly adds to the confusion.Easter means a four-day weekend (woohoo), quite possibly an Easter egg hunt if you still have that honour, of course more chocolate, and cake baking.
For me, Easter isn’t even Easter if you haven’t had at least a slither of chocolate or cake. And there’s definitely always one conspicuous fluffy chick decoration flying around somewhere.In preparation for the weekend, thanks to Dr. Oetker’s simple Bake in the Box cake mixes, Easter snacks have been well and truly been squared away.
And in four teeny weeny steps, you’ll have your fresh loaf ready to be devoured- just tear off the lid, empty the sachet into your box, add milk, mix and bake in the box. For these trio of bakes- lemon and poppy seed, double chocolate and Banana with choc chip- I’ve decided to customise two and keep the lemon and poppy seed plain and as scrumptious as it is.
Accessorised to the nines for Easter, I decided to disguise the banana and choc chip loaf into a nutty bunny.
Frosted with cashew butter and icing to replicate the fur, I used a fork to its texture and dried fruits and nuts for the finer details.As for the double chocolate cake, I thought I’d give it a sprinkle of extra pizazz with fudge bites both inside the mixture and flaked on top to garnish.
And that’s a wrap. Three cakes all of which look, smell and taste divine, in the most effortless Easter bake-off against myself.Perfect for anytime really, and particularly ideal for when time’s a bit short. A simple bake with zero mess and zero hassle.
I’m thinking how for the next coffee catch-up, with a warm slice of banana loaf just sounds absolutely dreamy.

I love these! I don’t have the patience for baking often, but when I do, I love fresh, warm cake! Definitely going to give these a go, and decorate them so I can feel like a baking goddess! Love what you did with them.
