Recipe: lemon baked side of salmon

In our most recent food shop, we finally took the plunge to treat ourselves to a fresh side of salmon slice. Every time we come across it in our shops, we always debate whether we should or not. This time though, we took the plunge and felt really excited to cook with it, already discussing recipe ideas on the journey home. 

The portion was a right whopper, knowing we’d get at least two meals out of it. For anyone that is looking to start eating more salmon, or doesn’t particularly like strong salmon flavours, the side piece is a perfect cut for you. The flavours are subtle and the meat still quite fleshy, something you can sink your teeth into.

For our first recipe, we steamed the entire salmon piece in the oven via a tin foil wrap. Accompanied by fresh vegetable and whole grain rice, it was a very wholesome and rewarding evening meal. As for our second dish the following day, we used the leftover salmon as flakes in a pasta salad for a quick, healthy pre-sports meal.

Lemon and bay leaf baked salmon
Coated in fresh lemon and dried bay leaves, this baked salmon dish is easy to prepare and cook in the oven.

Salmon
  1. Side of salmon portion
  2. 1 lemon
  3. 6 bay leaves
  4. Fresh dill (optional)
  5. Olive oil
  6. Salt
  7. Paper
  8. Tin foil
Sides
  1. Vegetables of your choice
  2. Grains of your choice
Instructions
  1. Preheat your oven to 180°C.
  2. On a large baking tray, place a large sheet of tin toil to enclose your salmon into.
  3. Place the salmon on the tin foil.
  4. Season the salmon with salt and pepper.
  5. Cut the lemon into slices and place on top of the fish, alongside the bay leaves.
  6. Drizzle oil over the salmon.
  7. Using the sides of the tin foil, enclose the fish to create a parcel for steaming.
  8. Bake in the oven for 30 minutes (dependant on your oven you may need more or less time). The best test is to see if the salmon easily flakes.
  9. Whilst the salmon bakes, prepare the sides of your choice.
  10. Serve up and enjoy. For those of you who love dill, this will be your chance to garnish to your heart's content.

We were really impressed with the final outcome in terms of taste and the ease of cooking. The salmon was soft and flakey, very nourishing and an easy meal to adapt to in terms of garnishes and sides. 

Autumnal Recipe Tip

Especially with the pumpkin season coming up, an alternative to the above recipe may instead be to glaze the salmon with honey, paprika and cinnamon, and choose a side of pumpkin, squash or carrots for an extra Autumnal vibe.

Ingredients
  1. Pasta
  2. Salmon
  3. 150g cream cheese
  4. Spring onions
  5. Salt
  6. Pepper
  7. Garnishes of your choice
  8. Pepper
Instructions
  1. In a pan, bring the water to the boil and add in your pasta.
  2. Once drained, drain the majority of the water leaving approx 100ml to create a sauce.
  3. On a low heat, return the pan to the hob with the pasta inside.
  4. Stir in the cream cheese and chopped spring onions.
  5. Add in the flaked (or smoked) salmon.
  6. Season with salt and pepper.
  7. And garnish to your preference.
Notes
  1. The beauty of this dish, is that you can accessorise this dish to however you like it. Add in as many vegetables as you like, or spice and herbs, or even additional ingredients. It's an easy dish to adapt.
